Basil Pesto Chicken Pasta
HELLO
Basil Pesto Chicken Pasta
There’s something about pesto that just feels like sunshine in a jar. This Basil Pesto Chicken Pasta is one of those easy meals that looks like you tried…but really came together with minimal stress (we love that).
It’s bright, flavorful, toddler-approved, and perfect for a busy weekday when you still want something wholesome and satisfying on the table.
Let’s make it.
a fresh cozy weeknight win…..
What You’ll Need
– 1.5 pounds boneless, skinless chicken breast
– 1 small bunch asparagus
– 1 pint grape tomatoes
– Pasta of choice (I used penne rigate)
– 1 small jar basil pesto
– Extra virgin olive oil
– Seasoning of choice
My go-to seasoning blend:
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1 tsp Slap Ya Mama
Confession: I don’t usually measure — I cook with ancestral vibes…but these measurements will get you in the right place.
Instructions
1. Preheat + Prep
Preheat your oven to 450°F.
Wash and dry your produce:
1 pint grape tomatoes
1 small bunch asparagus
Cut the woody ends off the asparagus and slice the spears into about 2-inch pieces.
Halve your grape tomatoes and set aside.
2. Season the Chicken
Large dice your chicken breast into bite-sized pieces.
Season generously (don’t be shy). Toss until evenly coated.
3. Roast Everything Together
Prepare a large baking sheet. I like to lightly coat mine with coconut oil, but olive oil works great too.
Spread the asparagus and tomatoes onto the sheet pan. Add the seasoned chicken on top.
Drizzle everything with about 4 teaspoons of olive oil.
Roast for 10 minutes, remove from the oven, stir everything gently, then return to the oven for another 10 minutes (or until the chicken is fully cooked through and slightly golden).
Your kitchen will smell amazing at this point.
4. Cook the Pasta
While the chicken and vegetables roast:
Fill a large pot halfway with water and bring to a boil.
Add 1 teaspoon of salt and your pasta.
Cook according to package directions (about 10 minutes for penne).
Drain and return pasta to the same pot. Cover to keep warm.
5. Bring It All Together
Once the chicken and veggies are done, transfer them straight into the pot with the pasta.
Add the entire jar of basil pesto and gently stir until everything is coated beautifully.
The tomatoes will soften slightly and create a light, juicy texture that pairs perfectly with the pesto.
To Serve
Spoon into bowls and serve warm.
Optional additions:
Fresh grated Parmesan
A squeeze of lemon
Red pepper flakes for a little kick
Enjoy
